This coffee originates from the farm Villarazo, cultivated by Jairo Arcila. It undergoes a thorough harvesting process, adhering to strict ripeness standards. Following harvesting, the cherries are carefully floated and hand-sorted to eliminate any defects. Subsequently, they undergo a 30-hour underwater fermentation before being pulped. The parchment is then delicately washed and dried under controlled temperatures until reaching the optimal moisture level. This micro-lot consists entirely of 100% Pink Bourbon, a varietal currently subject to research to determine its exact origin. It is believed to be a mutation occurring at an altitude of 2100 meters above sea level in San Adolfo, Huila.
