Origin Story


The La Palestine farm is located two hours from the city of Jaen in El Triunfo village.
Originally established in 1951 by his parents Juan Alarcon Gonzales and Sobeida Coronel Martine, Jose took over control in 1990.
Today Jose’s coffee is his primary source of income alongside growing bananas, yucca and fruit trees.
He’s proud of his work and the rich history of coffee within his family.
Up until 2022 harvest Jose had concentrated on Bourbon, Caturra, Catuai and Catimor but this was his first year producing Geisha.

Processing method
The cherry is mechanically pulped and dry/wet fermented for about 24 hours on plastic tanks.
Then it is washed and dried in a solar dryer.
All wastewater and mucilage is placed in a deposit in the ground.
Raised pallets are used to avoid contact of parchment coffee with the floor.

*We use 1 cup Hario V60 Ceramic, our water is Reverse Osmosis 70ppm-100ppm
