The municipality of Chachagüí, originally known as Chabchabí, has a rich history dating back to its foundation by the Spanish in 1574. Despite this colonial origin, the area retains strong ties to its indigenous heritage, particularly the Quillacinga tribe, who once thrived here.

Spanish colonization brought the establishment of sprawling haciendas, introducing practices such as cattle farming to the region. Additionally, the Jesuits played a pivotal role in shaping the area's agricultural landscape by introducing coffee farming to Colombia. Although initially cultivated in Northern Santander, coffee cultivation eventually spread throughout the country, becoming a cornerstone of Colombian agriculture. Today, Nariño stands out as one of the leading producers of high-altitude specialty coffees in Colombia, a testament to the enduring legacy of the Jesuits' agricultural practices.

Among the dedicated coffee producers in Chachagüí is Yermy Neyl Pedraza, whose family has been cultivating coffee for generations. At his three-hectare farm, Finca La Joya, located at an elevation of 2,000 meters above sea level, Yermy grows the Caturra and Colombia coffee varieties. The main harvest season spans from May to July, during which ripe cherries are carefully hand-picked and sorted for quality. Following harvesting, Yermy employs post-collection processing, including a 96-hour fermentation period and 15-day mechanical drying in a Guardiola machine.

Yermy's commitment to producing high-quality coffee is evident in every step of the process, from cultivation to post-harvest handling. His attention to detail ensures that each batch of coffee from Finca La Joya maintains its exceptional flavor profile, coveted by coffee enthusiasts worldwide. Through his dedication and expertise, Yermy contributes to the rich tapestry of Colombian coffee culture, preserving traditions passed down through generations while embracing innovation in pursuit of excellence.
