Vincent Rukeribuga is the proprietor and operator of his own farm situated in Kamonyi village, in the Cyato region of Rwanda. He embarked on his journey as a coffee farmer in 1989 with just 100 seedlings, gradually expanding his production over time. Vincent observed that his neighbors were able to finance higher education for their children through coffee production, inspiring him to do the same. His meticulous attention to cherry selection and cultivation of coffee plants caught the eye of TROPIC, who decided to collaborate with him to develop anaerobic offerings. Now, Vincent's cherries are kept separate to maintain traceability back to his farm. Every week, Vincent delivers freshly-harvested cherries to the mill, where they are sorted, floated in water to remove defects, and then fermented for 24-72 hours in sealed tanks. The duration of fermentation depends on ambient conditions and factors such as sugar content. Following this, the cherries are moved to raised beds to dry in the sun for an average of 20 days, being turned every 45 minutes to ensure uniform moisture content. Once dried, the cherries are stored in a cool, dry environment before being hulled, cupped, and milled for export.
